- Red Pepper 1
- Yellow Pepper 1
- Leek 1
- Broccolini 1 bunch
- Salmon 1 fillet
- Lemon 1
- Dill 1 bunch
- Avocado Oil 1/4 cup depending on how many veggies you have
- Salt & Pepper to taste
- Ranch Seasoning 1/2-1 tsp
This was an extremely easy recipe.
To Prep: I cut up the peppers and leek and trimmed the broccolini, then placed in a pyrex dish in the fridge for later.
When I got home from work, I pulled the veggies and sauteed in the avocado oil with a little ranch seasoning.
I sliced the lemon and put it on a cast iron skillet with lemon slices and a generous sprig of dill on top. I baked this at 400 for about 10-12 minutes.
Served the salmon over the veggies and it was delicious.
Time Saving Tip: I made enough veggies to have for a second dinner that I made with chicken.
